Get a job in a restaurant.
If you love the work, then ask your questions. It is impossible to explain this job in a way that you would not only understand but believe.
How much you can make is really limitless but culinary school is really a waste of time and money if you are not suited for the job. And if you go without the basics, you will have no time to learn the finer points that will earn you the big bucks.
Yes it is very hard, very hot work but it is an excellent career if you love it.

Salary is going to depend on the level of the restaurant.

I have restaurant customers that refer to the chef, but it is nothing more than a dive coffee shop. I also have 4 star resorts. You can igamine that the 4 start resorts pay the chefs better.
Pay for a chef is not much especially in the beginning. I would suggest that you find a community college that offers culinary arts. They are less expensive than the high price private culinary arts school. You learn the same basics. The key is getting your foot in the door and that is where the real learning happens.
