For experienced chefs only?



Ok, so I am a 14 year old that has been working as garde manger at a french restaurant. I work lunches with the sous chef. the problem is, im inexperienced so i get nervous when we are busy. i also go slow compared to the sous chef so i get discouraged sometimes. I just need some tips on how to stay calm under the pressure of the busy lunch. i know i have only been working in a kitchen for a month and a half, but i just want to go faster. i love to cook and i know i want to do this for my career and i plan to go to culinary school, but i just need some tips, please. before i started my summer job, i would go into the restaurant and be an intern to the executive chef and he would teach me french cuisine, so i know a lot about it, just not a lot of on hands in the restaurant stuff. thanks a lot.

You have been at the job for a very short time, so it is natural to be nervous.
The best way to increase your speed is practice. At 14, you are in the best place you should be if you want a career in food service!!
When the going gets rough, don't panic, just keep going and you will dig yourself out. It gets easier over time, trust me on this!
At my first job as saute, I was so green I felt like I was in the weeds before I even clocked in for my shift!! I had nightmares about the restaurant being on fire and I was the only one in the kitchen still cooking when everyone else had run out to safety!! (It was traumatic then but it's pretty funny now 20+ years later) I just kept at it and after a few weeks was having no trouble keeping up and the nightmares stopped!!

You will get a lot faster and more comfortable with the rush the more you work. Just listen to the head chefs, do your best, and don't sweat it. Nobody expects a 14 year old with one month experience to be running the place.
