Can you explain the captain's role in a restaurant?



What exactly is their job description?

Popular question, eh?
The Captain in fancy restaurant similar to a head waiter. Perhaps he adds a little class to the place. Hopefully! Maybe he (or she) tells you what he likes that day and makes sure you're enjoying your meal. Perhaps he recommends a bottle of wine and opens it or prepares Steak Diane, Crepes Suzettes or Caesar Salad tableside. Maybe it's a Continental or French or Italian Place.
Usually the Captain is tipped separately 10% of the tip while the waiters receive 15 - 20% of the check. With prices what they are these days it's not surprising fancy restaurants are on the wane and being replaced by corporate places!
