Food handlers permits?



I work at my local school kitchen and have my temporary food handlers card. I am going to have to take the class and then the test in about a 2 weeks or so. What I want to know is what kind of test is it, what all do they ask? I am very nervous about taking the test as I don't know what all is on it. I am afraid if I fail the test I might loose my job as I just started there this year. My memory is really not that good at all, being nervous makes it even worse. By the way, I am 50 years old.

Ive been a restaraunt manager for 16 years, one thing ive learned from "food handler classes" is that they spoon feed you everything you need to know. most state licences are 20 questions. they only cover the basics. For a mangement course its usually 3 days and much more in depth. try to write down when the instructor tells you " you might need to know this", generally thats a question on the test. if you write the answer down it will help you commit it to memory. just remember the basics. food danger zone is 40-140 degrees. anything that drips must be kept on a lower shelf, only things that can be sterlized can be used in a commercial kitchen. ie stainless steel or some plastics. and washing your hands makes them free of dirt, sanitizing them makes them clean. its been years since i took that test, but i hope i was helpful.

the test mostly contains questions concerning food,the serving and handleing also about cleaning keeping area clean washing pot and pans keeping food hot just different things about what your already doing
They either give you a 'movie' to watch or a speech beforehand It is very simple, just remember numbers, and logic. Like number of days in fridge, temperature of various items, to be kept in fridge or on heat, number of seconds to when and how to wash your hands, how much bleach per water, and water temp for cleaning dishes. The rest is about not keeping drinks off the food prep place, no smoking, not to touch your face or hair or pick your nose;), how long you can keep the food setting out, not to put food boxes on floor, don't drop food and put it back, etc. very basic, and mostly logical.

Yeah, 20 questions. They make it fun usually, and they want you to pass, so they make it easy, but valuable. That 's about it. Don't be nervous, a child could do it. Good speed.
I took the food handlers permit test last week, and i was surprised how easy it actually was. Most of the questions are common sense. Good luck! By the way, I am 15 years old.

It's multiple choice and common sense will help you through.
I remember the sanatation text in school! It was so dry I used it for years as a sleep aide!!
Don't worry its easy. Remember the temperature danger zone, 41-140. Hot foods above 140 and cold foods below 41.
