Job to prepare for culinary school? |
I'm planning to go to a culinary school after high school, and try to make it as a pastry chef. I'm a junior in high school now, what job should i be looking for in order to prepare for culinary school. Also any further advice into this field is welcome. I admire your ambition. It鈥檚 good to have some experience, before attending culinary school. I don鈥檛 want to discourage you. I don鈥檛 want to shatter your dreams. If being a pastry chef is your ambition, there isn鈥檛 any reason why you shouldn鈥檛 be able to work in a bakery OR in a hotel, diner or restaurant bake shop. THE BIG drawback: the ladies and gentlemen working in this aspect of food service, generally begin working very late in the evening - about midnight to as early as 3 AM. Generally bake shop folks are finished about noon or later. It鈥檚 a very challenging and demanding schedule. Why? Two reasons: 1] Because ladies and gentlemen prefer fresh-baked baked goods. 2] Working I a bake shop or bakery causes that person to have an almost reverse schedule: When the great majority of folks are working, bake shop and bakery people are sleeping. When the great majority of folks are sleeping, bake shop and bakery people are working. During warm weather months, the work may be very hot. This is very important: Its better to work for a hotel chain than a mom-and-pop bakery, diner or restaurant. The pay is usually better. The benefits are usually better. Try for something like a busser or a dishwasher since you are too young to be a server in most places. This will give you an idea of what it is like to work in the food industry. You might also try towork as a cashier or customer service person in a bakery or cafe. These will give you a better idea if this is the place you want to work as your career. Keep in mind though that the type of restaurant that you would probably find to work in right now may not be as high end or high quality as what you would be able to work in as a qualified pastry chef. Love to bake, and I have worked in food industry for a long time. wow this is wierd... I'm a junior in high school right now and I plan to do Baking and Pastry Arts at either JWU Rhode Island or CIA new york! Right now I am working for a cake decorator whom I interned for, for about 2 months free of charge. I am not sure if it is actually preparing me for the intensity of culinary school, but I think that the experience will help me regardless. I came across this person through the grace of God it seems, but I would suggest that you look up some people in town that have their own shops and honestly just tell them your story... you want to go to culinary school and are looking for someone who will give you some experience. You may have to sweep floors and wash dishes like me, but once they see your dedication I'm sure they'll begin to assign you some actual preparation work and even start to pay you! Good luck my friend and don't give up.. Places like the CIA want to see that you have some experience so it's a good thing you're starting now. (also ask at some restaurants or even ask the home ec. teacher at your school for some advice or hook ups!) Maybe I'll see you in culinary school in 2 years! |
