what's the question? do an apprenticeship if you want to become a chef. you'll never make a lot of money unless you have the credentials to back you up. find a larger fine dining restaurant that is willing to take on an apprentice. find out what your area will do in terms of education and apprenticeships. you may have to sign up with the government to be a full apprentice. chef apprenticeship (in canada) is 3 years or 6000 hours plus formal education (post secondary apprenticeship course is 2 years KM is 3)
and then get ready to work your butt off. it's a tough thankless job but in the end it's worth it! just remember you're going to be a glorified potato peeler for the first year or so...lol
