Where are speech language pathologists in greater demand?

Hospitals or schools? In which state, based on salary?

I know in Arkansas each school is required to have access to a speech pathologist and they are spread quite thin. It is quite a growing field. I think rehab centers would also utilize them. Check with a state you are interested in moving to and find out if school systems require their availability. That would mean there is a much higher demand.
There are fewer hospital jobs than jobs in schools, home health, and nursing homes.

I was a medical speech pathologist for 20 years and had only one school job during my career.
