Is having a legal record worth it if only to pursue unpaid jobs from an ex-employer?

I think this depends on the circumstances. Many employers don't bother to check previous legal actions so suing an employer doesn't cast quite the long shadow that you might think. In fact, many cases are settled before going into court.

However, legal actions always take a toll from a monetary and emotional standpoint. If the potential reward is large enough (the employee has a clear-cut case), then pursuing legal action may be worthwhile. If things are not so clear-cut, it may be worthwhile to forgive and move on.
I don't quite understand your question. Let me guess. It is always better to have a legal record of any business transaction. If you don't have such a legally binding document I doubt it if you can collect unpaid work from former employers.
