I would think most people would rather have a bigger chance at a smaller prize. I know I do. You could always do a mix like one $50,000, 4 $10,000, and 10 $1,000 prize. I like them best. Increasing the odds of winning would be the logical choice, but since the premise is that someone, presumable the reader, is going to win, reality is supended and the reader only wants to know how "big is my prize gong to be?"
So the answer is one big prize with impossibly high odds of winning will work better than several smaller prizes with greater chances of winning.
