With Google Ads, or Adsense -- you actually have NO choice but to report your taxes to the IRS (if you are in the US)because Google gives you and submits to IRS FORM 1099 reporting your income.

You will fill up Schedule C of the tax returns next year to report your income.

However, if you are not a US publisher, then it will depend on the tax laws in your country. Google will not submit tax forms to Non-US nationals and it will depend on you whether you will report your income or not
You just keep all the stubs that are sent with your cheques, add them up at the end of the tax year and put that money down. If you had your own little business you could start writing off things like your computer, even your bedroom as an office.

The taxman will find out, the only time they don't is when you get paid in cash.
