As a South African that's leaving UK aftr 2years of work here, what % of tax that I have paid can i get back?

Normally you can get back only what you paid in the current tax year, which always begins on 5th April. The Tax office will give you a statement of the amount due to you.
Contact the Inland revenue and ask them, you probably wont be entitled to anything though its not a god given right, only if you have paid well over the odds for emergency tax you get rebates for certain periods not percentages.
